The most important meal of the day.

I love breakfast foods. There is nothing better than waking up, the sun shining and having a nice, relaxing breakfast. I am not talking about the on the go, grab a piece of toast breakfast like I have most days of the week. I am talking about the Sunday morning, after you’ve slept in breakfast with eggs, bacon, home fries and fruit (I sound like such a fatty)… the works! Not only do I like it for breakfast but I enjoy it at lunch and dinner as well. My sister thinks it is crazy and disgusting that we have omelette’s for dinner. I think it is because they are so easy and it is so delicious.

Last night, I forgot to take meat out of the freezer for dinner and did not feel like having to deal with defrosting.. for some reason I always forget about it and it ends up cooking a little in the microwave, it grosses me out. So if I forget to take meat out, we’re having breakfast for dinner. Chris made an amazing frittata a couple of months ago; I wanted to try it because you can stuff more things into it than an omelette.

1.    I sautéed a little garlic in oil and added my chopped onions, peppers and mushrooms. After they were cooked a little, I also threw in some frozen spinach and a few minutes later, I added about a cup of black beans.
2.    While this was cooking, I cracked 8 eggs and added a little fat-free milk (just like you make scrambled eggs)
3.    When the frozen spinach wasn’t well… frozen any longer, I mixed everything in with the eggs mixture where I then added salt, pepper, basil and crushed red pepper.
4.    I sprayed the pan so the eggs wouldn’t stick to it and I let it cook on the stove (a little less than medium) you don’t want it to burn.
5.    There are so many ways you can cook these, some recipes called for baking, others were completely on the stove-top and then broil at the end to cook the top. Well I had no idea so I did all 3! Ha I had the bottom cook on the stove for about 5 minutes, then I placed it on 350 in the oven to cook the middle without burning the top or bottom.
6.    I took it out of the oven and added sliced tomatoes, chopped bacon and cheese and put the stove on broil (on low). This cooked the top quickly.

It sounds like a lot of work, but it really isn’t. Cooking it is the most time consuming. I thought it came out really good. You can throw whatever vegetables in you want and viola! You have a frittata! Mother’s Day is coming up, it is a great dish if you are having brunch!
